Copán region From the Copán region in southwestern Honduras, near the historic city of Copán Ruinas — an area known for some of the finest coffees in Central America. Farms benefit from fertile soils, high elevations (typically above 1,000 meters), and a range of microclimates. Honduras has shifted from quantity to quality since the early 2000s with infrastructure improvements including mechanical dryers, centralized wet mills, solar drying, lot separation, and traceability. Process: Decaffeinated using the Swiss Water Process — a chemical-free method using water, temperature, and time while preserving the coffee's original character.
